Crispy Golden Prawns kids cannot have enough of!

It is not everyday you put something on the dinner table and four kids polish them off before you can say ‘go’. That’s what happened with us and so how could we let the fabulous cook of the dish get away. Introducing Ms Poonam Chand, a smart chef of over 30 years. She is not your fly-by cooking-bloggers. She is your go-to-chef if you want quick, tasty culinary shortcuts. Here is our first favourite from her repertoire.


Crispy Golden Prawns

Ingredients:

Prawns-large 500gms, shelled and deveined
Egg-1
Bread Crumbs-1/2-1 cup
Juice of 1 lemon

For Marinade:

Ginger & Garlic paste-2tsps
Salt to test
Black Pepper-a sprinkle
Red Paprika-a sprinkle
Sriracha chilli sauce-1/2 tsp

Method:
1. Wash the cleaned prawns under running water and add the lemon juice.

2. Let them rest for about 5 mins.

3. Drain the excess water and marinade the prawns in ginger & garlic paste, salt, pepper, paprika and chilli sauce.

4. Refrigerate for about 2 hours

5. After refrigeration, pour one full beaten egg on the prawns.

6. Lay out bread crumbs on a wide plate.

7. Coat the marinated prawns in the bread crumbs. Try to press and flatten them out.

8. Keep them in the refrigerator for about 30-40 min. for the batter to set.

9. Deep fry them in very hot oil, about four pieces at a time. Keep adjusting heat from high to low to ensure they are all cooked through.

10. Remove the golden fried prawns on grease proof paper.

Enjoy hot and crispy.
