Healthy Chocolate Oatmeal Muffins Recipe

Healthy Chocolate Oatmeal Muffins are the quickest way to make both kids and moms happy. These are no white sugar or refined flour Muffins. Healthy baking expert Ms. Shalini Padmanabhan baked these little fluffy delights in our Facebook Live Session and my kids decided to bake them the same evening. They were melt-in-mouth, flavourful and made for an excellent combination with our homemade ice-cream. So read on for step-by-step instructions to baking your batch of muffins too.

First a little history about muffins. Although Muffins were first baked as flatbread in Britain or Europe way back in the 18th century, the puffed-up version is a quick cousin of cupcakes that originated in the 19th century somewhere in America. Muffins tend to have a coarser texture and solid food flavours or items are added to the batter like chocolate chips, blueberries and even Corn and Cheese Muffins for the savoury ones. Intrestingly Apple Muffin is the state muffin of NYC and corn muffin is the official state muffin of Massachusetts.


Now for the delicious and super easy- Healthy Chocolate Oatmeal Muffin Recipe -

CHOCOLATE OATMEAL MUFFIN
INGREDIENTS :
Butter 50 gms
Brown Sugar - 3/4 cup
Egg - 1
Oats - 1/2 cup
Hot water - 3/4 cup
(Pl soak oats in hot water for half hr)
Cocoa - 1/4 cup
Aata (Wholewheat flour)- 1/2 cup
Baking Soda - 1/2 tsp
Vanilla essence - 1/2 tsp

                                          

Step-by-step
1. In large bowl beat butter and sugar till they mix well. 
2. Add the egg and beat  till mixture turns fluffy. 
3. Add soaked oats mixture and beat well.
4. Add Aata, soda, cocoa and vanilla essence and mix till it turns into a smooth cake-like batter, but slightly of a thicket consistency. 
5. Preheat oven to 180* C for 10 mins. Pour batter into muffin cups and bake for 20- 25 min. 

Serve these hot with Hot Chocolate
