Muffins are smart cup-cakes that believed in miracles. Chilli Cheese Corn muffin is a classical example to it. During the lockdown, when we are breaking down our heads to make some simple, easy, quick and healthy snacks for kids and other family members, such innovative muffins comes very handy.
Ms Shalini Padmanabhan made this snack on a live session at Ketchupmoms Facebook and it is one of her culinary miracles. When our baking expert made this on the live show, I am sure most of us were drooling. It looked so yummy!
So, here is the recipe and method to make it.
INGREDIENTS :
Melted Butter 30 gms
Egg - 1
Corn kernel - 50 gms
Aata & Yellow corn flour - 3/4 cup ( 125 gms)
Curds - 1/3 cup 90 ml
Cheese - 30gm (1/4 cup)
3/4 tsp - chilli powder
20 gms - cut chillies
Salt - 1/2 tsp
Baking powder - 1 tsp
Baking Soda - 1/2 tsp
METHOD
1. Mix melted butter, curds, and egg
2. In a large bowl mix all the dry ingredients- flour, cornmeal, b. Powder, soda, salt.
3. Mix dry ingredients to egg mixture.
4. Stir in chillies, cheese n corn kernel
Preheat oven to 180* C for 10 min.
Spoon batter into muffin cups and bake for 15- 20 min
It's a myth that muffins are only sweet like Blueberry Muffin, Chocolate and Oatmeal Muffin. They can be savouries too.
