Meethe Chawal Recipe that Kids Love in Winters

Meethe Chawal or Sweet Rice with dry fruits can cheer up kids and boost their energy levels. All the more during winters, when the body demands more energy to function well. Ingredients like Ghee and dry fruits are also considered 'warm' in nature. Which according to Ayurveda means that they gel well with the winter Ritu or season and the demands of the body during the same.

What I personally love about this recipe is the use of fresh and seasonal carrots- they provide a beautiful colour and taste to this sweet chawal dish. No artificial colours required is always great for kid's health. This dish will also perk up any kid's birthday party menu and the bonus is the ease with which you can conjure this up in less than 10 minutes.

Ingredients for the Meethe Chawal Recipe that Kids Love in Winters

1 cup long grained (basmati) rice (soaked for 10 minutes in water)

2 tbsp Ghee (Clarified Butter)

4-5 Cloves,  3-4 Black pepper, 4 Green Cardamoms

3/4 Cup Sugar

2 tbsp. each of Cashew Nuts and Almonds

2 Carrots grated

2 tbsp. grated Coconut

1 1/4 Cups of 

Meethe Chawal or Sweet Rice with dry fruits can cheer up kids and boost their energy levels.

Step-by-step:

1) In a thick bottomed pot or pressure cooker, heat Ghee.

2) First fry the Cashew Nuts, till they turn light brown. Remove the Cashews and follow the same with Almonds.

2) Now fry the grated Carrots for 2 minutes.

3) Add Rice, Whole spices and 1 1/4 cups of Water in this. Add Sugar and the Dry-fruits and cook till well done. If you are cooking in the pressure cooker just one whistle is enough. 

4) Allow the steam to escape before opening the lid.

5) Serve hot!

This is a super easy recipe of a seriously awesome comfort food. It makes life easy because this is a one-pot recipe. And of course it is a refreshingly hot winter favourite. Such a delicious recipe. Reminds me of basanti pulao that is so widely loved in Bengal. I prepare at home too, but the addition of coconut is something unique. Gotta try this!
