Easy Cheesy Pineapple Popsicles for kids

Pizzas, burgers, pasta, french fries, chickpeas and bread, chocolate truffle cake, jelly and what else. This ‘what else’ was enough to give me sleepless nights. I know, I brought it on myself the day I decided to host the twins’ birthday party at home. That too with home-made food. Yeah, what was I thinking!

So this ‘what else’ had to be something quick, tasty and kid-friendly. And then my friend shared her party recipe that I was not sure would taste great. But it was the evening before the party and the decision to make pineapple popsicles was time-forced on me. And I am glad it was. And so here I am sharing a recipe that will always come handy, when you need something extra.

Speedy cheesy pineapple popsicles


Ingredients :

Coconut (1 cup) : Grated
Canned Pineapple (1/2 cup) : Chopped and squeezed.
Cheese (1 cup) : Recipe said Cream Cheese. I used Amul cheese, finely grated. Step 4: Roll the pineapple & cheese balls into grated coconut, till they are all fluffed and white on the outside.

Step 1: Mix the well-squeezed out pineapple with grated cheese. Add cheese to the pineapples slowly slowly.
Step 2: Freeze the mixture for one hour.

Step 3: Take the pineapple and cheese mixture out and divide it into small bite size balls. 

Step 4: Roll the pineapple & cheese balls into grated coconut, till they are all fluffed and white on the outside.

Step 5: Insert the pop sticks and firm up the Pineapple balls (so this is a little twist I added to make them more appealing for kids). Freeze them from six hours to overnight.

Step 6: Serve the Cheesy Pineapple Popsicles and watch them disappear. I did. And it was such a pleasure really. And to let you into a secret. Not just kids, even the adults loved these.
These pineapple popsicles are bit sweet, bit cheesy and a bit coarse. A little offbeat, but the kids loved them.
